5. Beets
Beets have a distinctive red color which makes it ideal as a natural alternative to food coloring for baking. This vegetable is prized in Russia where it is made into borscht and is often eaten pickled and sweetened. Like many other brightly colored vegetables, it contains phytonutrients that fight free radicals. These free radicals can speed up aging and make the body more vulnerable to disease. Although the root of the beet is more widely used, the top of the beet or the green also has significant amounts of nutrients and fiber.
A single cup of beets delivers 4% of the daily allowances of fiber. Beet juice also promotes heart health and can lower blood pressure. It contains iron that can improve stamina and relieve fatigue. Although beet juice provides vitamins and minerals, eating the actual roots and greens can give you the fiber you need.
