To start, you are going to take some diced, boneless chicken, an egg and some bread crumbs. Crack the egg into a bowl and then place a large pile of breadcrumbs onto a plate.
You’re going to be coating the chicken in the breadcrumbs, so to do this, you will take each piece, roll it in the egg and then roll it in the breadcrumbs. Place each piece on a baking tray and when they’re complete, squeeze some lemon juice on top. You’re now going to heat the oven to 200C and place the chicken in there for about 30 minutes.
Meanwhile, you’re going to make a home-made fruit chutney. To do this, chop up some red peppers, some onion (small), and one apple. Add in a tin of chopped tomatoes and some raisins, and a large spoon of honey. Finally, sprinkle with chili powder. Fry this in a pan and you should be left with something that is sweet and sticky but also a little spicy.
Serve the chicken on a plate with the chutney on the side, and add a dollop of mayonnaise (optional) for extra flavor.
This recipe can also be made with the chicken being fried in the pan, though this makes it easy to miss parts and can result in one side becoming burned – so the oven should be the option for preference.
